  1. Stainless steel but be aware that the temperature will be much different than if you were using the cast iron. the stainless steel will heat up faster and not retain the heat as long as the cast iron. Just make sure you keep a close eye on your candy thermometer.

  4. Contact Starbucks for an accurate answer. My guess is if it is called NUT syrup I would not take a chance. Even if there are no nuts they might use a nut extract for flavoring and if you are highly allergic it...
