Did you use confectioner's (powdered) sugar or granulated sugar? Powdered sugar will never be grainy --

Mixing may be only one of the causes. It could be that the grainy texture is due to the ingredients. Good Luck!

...or cream, the dairy may have started to turn. I have no idea what the grainy texture could have been, unless the sugar didn't melt properly or the pudding...

Yes, it's going to be grainy, because the sugar has not dissolved. Not all recipes are good.
