Air to fuel,what you show is 12.5 to 1. That's close but you are running a little rich not enough air 14.6(air) to 1(fuel) is what a stock engine is supposed to run best on. the more power you make you need more fuel I run about 13-1 on a 500hp small block...

usually turning the screw to the right, tightening it, will reduce the amount of fuel flow. I would turn it until the engine starts to stumble, then turn it back 1/2 to 1 turn or until it runs smooth.

Having a stock MAF sensor on a built engine sounds like you problem to me. When you increased to 331 ci and higher fuel pressure the engine needs more air. Your MAF sensor can't sense how much air to deliver to obtain the right fuel/air...
